Campfire Hash
2 tbsp cooking oil
1 lg onion;chopped
2 minced garlic cloves
4 lg potatoes; peeled and cubed
1 lb smoked sausage; cubed
1 can whole kernel corn; drained
1 can green chilies(optional)
In a Dutch oven, heat oil. Saute onion and garlic until tender. Add potatoes.
Cook, uncovered, over medium heat for 20 minutes, stirring occasionally. Add
sausage; cook and stir until potatoes are tender and well browned, about 10
minutes. Stir in corn and chilies; cook until heated throughout.
